We live in a moment in time dominated by reality shows depicting questionable realities--especially those involving chefs. I was struck this past week during my annual Amtrak Railroad chefs' meetings in Wilmington, Delaware (yes, besides working for my own joints, I do serve on culinary councils for both Amtrak and Macy's), by just how many different kinds of chef realities there are in this world. For three days I worked with chefs bound by trains that are constantly moving, yet stopping for new customers every few hours. The cross-continental trains might have the same rider for four days or four hours. One passenger doesn't care about menu variety so much for their one solo meal aboard, while another is desperate to have a variety of options for breakfast, lunch, dinner and snacks from the same dining car for the length of their cross country trip.

The dining car kitchens are tight, hot, and under-manned. The high speed Acela train that patrols the northeastern seaboard from Boston to DC might, at any given point on its route, be serving Veal Osso Bucco or a vegetarian eggplant and mozzarella involtini with marinara sauce from a galley kitchen no bigger than a front hall closet. In a typical 5 or 6 hour run the food service team of...1...might serve 300 people.
