Cooking Classes Sunday Family COOKING CLASSES at the Palace Ballroom

Due to the overwhelmingly positive response to our first series of cooking classes, Tom Douglas Restaurants and Premera Blue Cross are pleased to offer a new series starting this fall: Sunday Family Lunch at the Palace Ballroom.

Cost: $50 per participant (suggested age 10+)

Location and Time: Palace Ballroom (across the street from Palace Kitchen) 11 a.m. – 1:30 p.m.

Class Dates: November 7th, December 5th, and January 9th

Little Tastes of the Dahlia Little Tastes of the Dahlia: Jackie's Squash

Fall is in the air and we all know what that means at Dahlia Lounge......Our "Little Tastes of Dahlia" series is right around the corner!

Tom's wife, Jackie Cross has been working hard all summer at their farm in Prosser, WA and it's time to enjoy some of the fruits (veggies) of her labor. Chef Brock will be transforming Prosser Farm's different varities of squash into delicious little nibbles, while she shares the trials, tribulations, and joys of their 20+ acre vegetable patch. Jackie has planned, planted and harvested all summer, and has helped to supplement all of our restaurant kitchens with delicious, picked the same day produce!

Date: October 20th

Time: 5:30 - 6:30pm

Cost: $25.00/per person

Palace Kitchen Happy Hour at the Palace Kitchen

The menu this month is:
  • Rogue John John Ale paired with Iberico Paleta ham with hazelnuts and honey
  • Ninkasi Believer Double Red Ale paired with a fried oyster and malt vinegar aioli

Made From Scratch Series: Summertime Family Meals from Your Pantry and Farmer's Market

The Made from Scratch series focuses on education and a small class size.  Every class begins with an interactive discussion with a local nutrition expert that will include practical, healthy tips for both kids and adults. The class also includes live demos by the Tom Douglas Restaurants chefs, a ‘healthy slurp’ station, a behind-the-scenes restaurant tour and hands-on cooking where students prepare lunch for the class to enjoy together.  This curriculum repeats for 3 classes, and then the theme changes. Past themes include, ‘Building a Healthy Pantry’ and ‘Foods from a Farmer’s Market.’  Students will leave with a binder filled with excellent resources, including several recipes to try at home.

Cost: $40/adults $25/kids (suggested age 7+)

Location and Time:  Palace Kitchen 11 a.m. – 1:00 p.m.

Remaining classes in the Fall series:   October 9th        November 13th

Class Theme: Heart-healthy and diabetic-friendly meals

I am happy to be at the keys typing this note. I didn’t realize how long it has been since my last until all the news that fit to print overwhelmed the space I have on the page. So here goes.

Have you been to the new Seatown?? For the last 27 years the possibility of having a restaurant on the corners of Pike Place, Western Ave and Virginia St. has been nipping at my pea brain. Seatown is blessed with a view down the well-worn cobblestones of Pike Place Market all the way to the iconic market clock bearing the familiar market slogan “Meet the Producer”. You can take a broad look over Victor Steinbrueck Park, Elliot Bay, and Harbor Island and even get a breathtaking visit from Mt. Rainier once in a while. This has to be one of the most natural dining places in the whole city. My dreams came to fruition when the space that housed Habits furniture store next to Etta’s became available this last spring.

Roasted Cauliflower and Chanterelle Mushrooms with Fresh Thyme

Makes 4 servings

Now that fall is here and the evenings are chilly, it’s time to turn on the oven and roast veggies for dinner. This is one of Tom’s favorite ways to eat cauliflower- he whipped this up just the other day as an office snack!

Chanterelles are beautiful this time of year, but of course you can substitute other wild mushrooms, or readily available cultivated mushrooms such as shiitakes.
