Roasted Cauliflower and Chanterelle Mushrooms with Fresh Thyme
Makes 4 servings
Now that fall is here and the evenings are chilly, it’s time to turn on the oven and roast veggies for dinner. This is one of Tom’s favorite ways to eat cauliflower- he whipped this up just the other day as an office snack!
Chanterelles are beautiful this time of year, but of course you can substitute other wild mushrooms, or readily available cultivated mushrooms such as shiitakes.
