Oysters & Grower Champagnes
If you love oysters, or beautiful grower champagnes, OR BOTH, this is the event for you! Come sip and slurp with us!

Date: Monday, January 17th
Time: 5:30-7pm
Location: Etta's
Cost: $45 tax and gratuity not included
    *cost includes 12 oysters and 6 tastes of grower champagnes

We will have two experts on hand to lead us throughout the evening: Ian Jeffards from Penn Cove will lead us through a tasting of 6 different types of oysters while Steve Olson from Cavatappi will engage us with his sparkling knowledge on 6 different grower champagnes.

Slainte! A Celebration of Scottish Fare
Date: Tuesday, January 25th 2011

In honor of the birthday of Scotland's national poet, Robert Burns, The Palace Ballroom is hosting an evening of all things Scottish! Chef Brock Johnson of Dahlia Lounge and Richard Hill, scotch enthusiast, are combining their liquor and food knowledge to offer the best of Scotland.

The evening will include kilts, bagpipes, haggis, fiddles, Gaelic songs, Burn's poetry, delicious bites from the region and of course, a scotch tasting. Traditional Highland attire is encouraged and guests will be invited to learn cultural dances with music provided by a live band.

This will be a seated event. **This is a tasting event, and is not intended to be a full dinner.

Please come eat pizza with us at the new Serious Pie!

We are so excited about the South Lake Union neighborhood and have projects there in two locations. Tonight we are opening a second Serious Pie at 401 Westlake Avenue North. Wait until you see how cool the space is! Pie is located on the mezzanine overlooking our soon to be fragrant production bakery. Our bakers are moving into their new home on Monday, so when you are dining at the restaurant you will be able to watch our cooks at work on all of the breads and desserts that we serve in our restaurants.

The entry area has a cozy bar where you can grab a morning espresso or nosh on some proscuitto while waiting for a table upstairs. We also share the space with Michael Teer’s new wine shop, Soul Wine. He plans to operate a tasting bar and pour flights of interesting wine.

Our other project is a gorgeous historic brick building two blocks away at the corner of Thomas and Terry right on the trolley line.  We are dividing the building into 3 separate restaurants due to be open in April. Stay tuned to the website for all the details.

January offers lots of tasty opportunities with events and menu specials: oysters and Champagne at Etta’s,  pot pies at Seatown, a Scotch tasting at the Palace Ballroom and Little Tastes at the Dahlia Lounge. Read more below.

Long Bone Short Ribs with Chinook Merlot Gravy and Rosemary White Beans
Serves 6

I love the awesome look of this big bone lying across the plate – some of our cooks referred to these as Flintstone bones. But of course you could use the short cut or English cut short ribs instead. This is a great rib-sticking dish for our long gray drizzly winters.

My friends, Kay and Clay who own Chinook Winery in Prosser, Washington make great Merlot, and it’s a tradition in our house to drink and cook with it when we make this dish. Of course, another Merlot will do if you can’t get Chinook.

This recipe takes a long time to cook, but can easily made the day before and reheated before serving
